Vegetables - Corn - Corn Maque Choux

3 cups fresh bread cubes
1/4 cup butter
1/2 cup onion, chopped
1/4 cup green pepper, chopped (use red bell pepper if you prefer the color and mildness)
1 tsp. salt
1 1/2 cup milk
3 cups (24 oz. frozen) corn
8 oz. American Cheese
1/4 cup Parsley


Preheat oven to 350 degrees F.

Sauté bread cubes in butter until crisp. Set aside.

In 3 Tbl. butter, sauté peppers and onion until tender. Stir in flour and salt; blend in milk, cook until thick. Stir in corn.

Layer 1/2 of the corn mixture, 1/2 of the cheese, and 1/2 of the bread cubes in a greased 8x8x2
dish. Repeat layer. Bake for 35-40 minutes.

1/2 to 1 stick butter 1/4 cup sugar 2 eggs 2 tbsp. flour salt and Pepper to taste 1 cup scaled milk 2 cans whole kernal corn, drained Preheat oven to 325 degrees. In saucepan melt butter, sugar. Add eggs, flour, salt,pepper and scalded milk, stirring until blended with no lumps. Remove from heat and stir in corn. Pour into a casserole dish and bake for 45 minutes @ 325.

1 cup self -rising flour 1 Tbsp. sugar 1/4 tsp. cayenne pepper 1 tsp. salt 1 /2 tsp. pepper 2 eggs,beaten 1 1/2 cups whole kernel corn, drained 1/2 cup milk 2 tsp. vegetable oil Hot vegetable oil for frying Combine first 5 ingredients in large mixing bowl; mix well and set aside. Combine eggs, corn, milk, and 2 tsp. vegetable oil; mix well. Stir corn mixture into dry ingredients, mix well. Drop mixture by rounded teaspoonfuls into oil heated to 375 degrees. Cook until golden; turn once. Makes about 3 dozen
