Vegetables - Cheesy Spinach Appetizers

1 1/4 sticks of butter, room temperature
2 cups garlic croutons (or any flavor you like)
5 eggs, beaten
1 1/4 cup Parmesean cheese
2 (10 oz.) pkg. chopped frozen spinach, drained and squeezed dry


Combine butter, croutons, eggs, and cheese , mix together thoroughly. Add spinach, mix well. Shape into small balls and bake at 375 degrees for 10 minutes or until brown.

2 chicken breast halves -- boneless 1/2 cup spinach leaves -- cooked and chopped 1 shallot -- minced 1 tablespoon butter 1 1/2 ounces goat cheese 1 or 2 dashes nutmeg 1 pinch salt 2 tablespoons pine nuts -- toasted Seasoned Flour 1 tablespoon olive oil Slit a pocket in each chicken breast. Preheat oven to 350° F.Saute shallot in butter then cook spinach till nearly dry. Blend remaining ingredients; put into pockets. Fasten shut with toothpicks. Roll breasts in seasoned flour. Brown well in olive oil. Place in 350' oven for about 10 minutes until chicken is

10 oz. chopped cooked spinach, drained 3 oz. cream cheese 1/3 cup grated Swiss cheese 1/4 cup chopped onion freshly ground pepper 1 tsp. grated horseradish Place onion and spinach in the top of a double boiler pan, over water. When the onion is softened, add the remaining ingredients and cover to melt cheeses. Serves 4. For company, serve this stuffed in a tomato and baked until heated through.
