Vegetables - Cauliflower - Cauliflower Ham Chowder

1 ham bones; meaty
2 qt water
1 large onion; chopped
1 medium green pepper; chopped
1/2 c butter
3/4 c all-purpose flour
1 1/2 tsp salt
1/4 tsp pepper
4 c whole milk
4 c cauliflower floweret; cooked - and drained
2 c mashed potatoes (prepared with milk and -butter) for a rich, creamy texture
Minced fresh parsley; -optional

In a soup kettle, simmer ham bone in water for 1-1/2 hours. remove ham bone; set cooking liquid aside.
When cool enough to handle, remove meat from bone; discard bone. Return ham to cooking liquid.

In a saucepan, saute onion and green pepper in butter until tender. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add to the ham and liquid. Add cauliflower and potatoes. Cook until heated through. Sprinkle with parsley if desired.

Yield: 14 servings.

1 pound mushroom -- sliced margarine 1 onion -- chopped 1 lemon 1 head cauliflower -- cut into pieces 3 cloves garlic basil pepper salt 3 cups brown rice -- cooked 2 1/2 cups Cheddar cheese -- grated Preheat oven to 350 degrees. Saute mushrooms and onions in butter with juice of 1 lemon. Saute cauliflower with garlic and spices. Mix together with rice and cheddar. Cook 350 for 1 hour.

1 medium cauliflower (cut into pieces) 1/4 cup butter 2/3 cup chopped onion 3 Tbsp. flour 2 cups chicken broth 2 cups milk 2 Tbsp. Worcestershire sauce 1/2 lb. sharp cheddar cheese shredded Cook cauliflower; drain and reserve 1 cup liquid. Saute onions in butter; blend in flour. Add broth. Cook stirring constantly till comes to a boil. Stir in saved liquid. Add milk and Worcestershire. Salt and pepper to taste. Add cauliflower. Heat to boiling. Stir in cheese just before serving.
