Vegetables - Broccoli - Tiny Broccoli Quiches

Enough pastry for 9-inch double pie crust
2 tablespoons margarine
5 ounces frozen chopped broccoli -- thawed
1/4 pound Swiss cheese -- shredded
1 cup light cream
3 eggs
1 teaspoon salt


Grease and flour 36 mini-tart pans (gem pans). Prepare pastry and divide in half. Roll each half out on lightly floured surface to 1/8-inch thickness.

Using a 3-inch cutter, cut dough into 36 rounds; re-rolling scraps. Line shells and brush each lightly with melted margarine. Chill for 30 minutes.

Preheat oven to 400 F. Drain broccoli well on paper towels. Spoon about 1 teaspoon in each shell. Top with some of the cheese.

In a bowl, mix cream, eggs and salt. Spoon about 1 tablespoon of mixture into each cup or tart. Bake for 25 minutes* or until center is set. Serve hot.

NOTES : *Check quiches at 15 minutes, as some ovens are hotter.

2 cups water 1 package Chicken Top Ramen 1 Chicken bouillon cube 1/2 package frozen chopped broccoli 1 boneless, skinless chicken breast, cubed. Bring the water, top ramen seasoning packet and bouillon cube to a boil. Add the frozen broccoli and bring to a boil again. Add the cubed chicken, and boil until done (about 5 minutes). Add the ramen noodles, cook until done.

1 can cream of mushroom soup 1 Cup mayonnaise 1 large onion, chopped 1 1/2 C grated cheddar cheese 3 eggs, beaten 2 tsp. lemon juice 3 (10 oz.) packages frozen chopped broccoli, completely thawed and well drained, but not cooked. Ritz Cracker crumbs or cheese cracker crumbs a little butter or margarine Mix soup, mayonnaise, onion, cheese, eggs and lemon juice together. Then add broccoli and mix very well. Put in buttered casserole. Top with generous layer of crumbs and dot with butter. Bake in 350º oven 35-45 minutes until bubbly and heated through. Best if made the day
