Vegetables - Broccoli Rabe - Broccoli Rabe With Garlic And Pine Nuts

6 cup broccoli rabe, rinsed and large stems removed (about 2 bunches)
2 tsp olive oil
2 medium garlic clove(s), minced
1/8 tsp black pepper, or to taste
1/8 tsp table salt, or to taste
2 Tbsp pine nuts, toasted

Blanch broccoli rabe in a large pot of boiling water for 2 minutes; drain.

In a large skillet, heat oil. Add garlic and cook 1 minute. Add broccoli rabe and cook 4 minutes; season with salt and pepper. Add pine nuts, toss and serve. Yields about 1/2 cup per serving.

3 cups fresh Brussel spouts or 2 (10-oz.) boxes frozen 1/4 cup olive oil 1/2 large onion, chopped 1 tea. dried parsley flakes 1 tea. garlic powder 1/4 tea. salt 1/4 tea. pepper 1/2 cup chicken broth Cook fresh sprouts until tender or thaw sprouts if frozen. In a large skillet, heat olive oil; brown sprouts in oil with onion, parsley flakes, garlic powder, salt and pepper. Add chicken broth and cook until liquid reduces, about 3 to 4 minutes. Note: can substitute chunks of broccoli or cauliflower for the Brussel sprouts, if you prefer.

2 Tbsp olive oil 1 onion, diced 2 cloves garlic, minced 1 bunch broccoli rabe, coarsely chopped 1 can cannelloni beans, drained and rinsed 1 can reduced salt chicken broth Parmesan cheese In a saucepan, heat olive oil and saute onion until it is translucent. Add garlic and continue cooking another minute or so. Add broccoli rabe, beans and broth and simmer for about 30 minutes. Serve with freshly grated Parmesan cheese. Note: for more of a soupy dish, add another can of chicken broth.
