Vegetables - Bread And Butter Pickles

3 Marketmore (or your favorite) cucumbers, scrubbed and sliced thinly
2 cloves garlic, peeled and roughly chopped
1/2 sweet onion, peeled and sliced thinly (optional)
1 cup white vinegar
1 cup sugar
1/2 teaspoon mustard seed
1 teaspoon turmeric
1 teaspoon Kosher salt


Pack sliced cucumbers, garlic and optional onion in clean glass quart jar.

Combine remaining ingredients in a saucepan and bring to a rolling boil.

Pour boiling mixture over cucumber mixture and cover jar.

Refrigerate at least 24 hours before serving.

Note: Pickles will last in refrigerator up to six months.

1 gallon sliced ( med-sized) pickling cukes 3 white onions sliced 1 qt. cider vinegar ( 5%) 4 cups sugar 1/4 cup Kosher salt, ground 1 1/2 T turmeric 1 tsp celery seed 1 tsp mustard seed Layer the cukes and onions in a large bowl or small crock. Mix together the remaining ingred. and bring to a boil in a stainless steel pan and simmer 5 min. Cool Pour over cukes. Put into several qt jars. Refrigerate for 5-7 days. They will keep for months (if they last) in the fridge.

6 qt. unpared cucumbers — sliced 1/8 inch thick 6 tsp salt 1 qt vinegar 2 cups water 1 tblsp celery seed 2 tblsp mustard seed 2 tsp curry powder 5 cups sugar 1 small red pepper diced (optional) Sprinkle cucumber slices with salt. Cover with cold water and let stand overnight. Drain off brine and wash cucumbers several times with clean water. Bring remaining ingredient to boiling point. Add cucmbers. and heat all for 4 min.* stirring constantly, being careful not to let the mixture boil. (I find it takes more time {around 10-12 min.} – depends on the stove.)
