Vegetables - Balsamic Vidalia Onions

1 Vidalia Onion
1 beef boullion cube or equivalent of powdered boullion
2 Tbsp. balsamic vinegar or 2 tsp. olive oil


Preheat oven to 350.

Cut cone-shaped piece from top of onion and mince.

Place onion and minced top in oven/grill proof single-servingdish.

Put boullion in onion cavity and pour vinegar OR oil over.

Cover with aluminum foil and bake for 1hour or "bake" on upper shelf of grill for same amount of time.

BBQ sauceCut off the top and bottom and peel off outer skin. Spray lightly with olive oil and wrap in foil and place on grill til tender. Unwrap and place on grill and baste with BBQ sauce and grill for about 15 minutes or until it gets the grill marks. Depends on hot your grill is.

2 tablespoons butter or margarine 3 large Vidalia onions, coarsely chopped 2 cups (8 ounces) shredded Swiss cheese 2 cups mayonnaise 1 (8-ounce) can sliced water chestnuts, drained and chopped 1/4 cup dry white wine 1 garlic clove, minced 1/2 teaspoon hot sauce Melt butter in a large skillet over medium-high heat; add onion, and sauté 10 minutes or until tender. Stir together shredded Swiss cheese and next 5 ingredients; stir in onion, blending well. Spoon mixture into a lightly greased 2-quart baking dish. Bake at 375° for 25 minutes, and let stand 10 minutes. Serve with tortilla chips or crackers.
