Vegetables - Baked Stuffed Mushrooms With Spinach, Tofu And Pine Nuts

300 g. fresh tofu, drained and mashed
1 bunch baby spinach, washed, blanched, squeezed dry and minced
2 tablespoons toasted pinenuts
3 spring onions, finely sliced
1 tablespoon sesame oil
salt and pepper
cayenne pepper (optional)
12 medium button mushrooms, wiped clean with stalk removed


Preheat broiler.Grease a baking sheet.

Mix the tofu, spinach, pinenuts and onions in a bowl. Blend in the rest of the ingredients(except mushrooms and cayenne)and stir well.

Peel the mushrooms and spoon mixture generously into the mushroom caps. Top with a sprinkling of cayenne.

Place mushrooms onto a well oiled oven tray and grill under moderate heat until just cooked.

Note: You can replace the tofu with ricotta.

1 pound large fresh mushrooms 1/2 stick butter 1/2 teaspoon each: garlic salt & pepper 1 teaspoon parsley 2 Tablespoons seasoned bread crumbs 2 Tablespoons grated mozzarella Wash mushrooms. Remove stems and chop fine. Saute these in 2T. butter. Sprinkle with garlic salt and pepper. Add parsley and crumbs to make a stuffing. Melt rest of butter and put in a baking pan. Stuff caps and place in dish, sprinkle with cheese and bake at 350 for 10-15 minutes.
