Vegetables - Baby Potatoes With Lemon Thyme

20 small potatoes (preferably new potatoes)
Salt and pepper
Water, for micro-steaming
2 to 3 sprigs lemon thyme

Wash potatoes well. Put them in a microwaveable dish and sprinkle with salt and pepper, put a little water in bottom. Add lemon thyme and cover lightly and place in microwave.

Cook for 10 minutes on high.

Place a knife in one potato and see if it goes through, if it does then take it out and set it aside. If it isn't, put it in for another 2-3 minutes (depends on wattage of oven).

To serve, place 10 on each plate, cut them in half and sprinkle with some chopped lemon thyme.

1 lb. small white or red potatoes (about 2" long)10 cloves Garlic1/4 cup olive oil1 tsp. fresh rosemary, finely chopped2 tbls. fresh parsley, choppedSalt and pepper to tasteButter or margarinePreheat oven to 450 ° F.Wash and dry potatoes.Toss potatoes and garlic cloves with oil, herbs, salt and pepper until well coated. Arrange in baking dish in single layer.Bake, covered, for 25 minutes.Turn potatoes, then bake another 25 minutes, uncovered, or until potatoes and cloves are soft.Cut potatoes open, spread with mashed cloves and dot with butter or margarine if desired. Serves 4 to 6.

6 large potatoes, cubed 4 tablespoons garlic 4 tablespoons onions, minced 1 teaspoon salt 2 tablespoons pepper 8 tablespoons margarine Form 2 large pieces of heavy duty foil into bowl shapes. Divide potatoes equally among the two packages. Divide the garlic, onion, salt and pepper and sprinkle on top of potatoes. Top each package with 4 tablespoons of margarine. >Seal the foil in the shape of a Hershey's Kiss.
