Vegetables - Avocado - Avocado Salsa By 100pamela

Makes 4 cups or about 32 servings

1 (16 oz) package of frozen corn kernels, thawed
2 (2.25 oz) cans sliced ripe olives, drained
1 med. red bell pepper, chopped smallish
1 small red onion, chopped fine
5 cloves garlic, minced
1/3 cup olive oil
1/4 cup fresh lemon juice
3 tbl. cider vinegar
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp ground black pepper
Just before serving, stir in
3-4 diced avocados


In a large bowl, mix first four ingredients

In a small bowl mix the rest well except avocado and chill in fridge for at least 8 hours or overnight.

Just before serving, stir in avocado

2 ripe avocado 2 tablespoons lemon juice 1 clove garlic, crushed 1/2 small onion, grated 1 3 1/2 oz package soft cream cheese salt and freshly ground black pepper paprika to garnish Peel avocados, halve, remove stones. 3 medium ripe avocados, peeled and cut into chunks 2 medium plum tomatoes, cubed 2 medium cloves garlic 2 spring onions, sliced thin 2 tbs. lemon juice 1 tbs. minced coriander Salt Tabasco sauce Place avocados, tomatoes, garlic, spring onions, lemon juice and coriander in a bowl. Add salt and hot sauce to taste and mix gently. Serve immediately.
