Vegetables - Artichokes By Joy

6 artichokes
8 Qts. water
2 Cups Italian Parsley -- Coarsely Chopped
1 Heaping Tsp. freshly ground pepper
2 Cups Unseasoned Bread Crumbs
3 Cups Romano Cheese -- grated
3 Cloves Garlic -- Minced
2 Cups Oil


Turn artichoke on its side. Holding artichoke firmly by its leaves, slice stem off bottom with a serrated knife, being careful not to cut into leaves. Then slice about an inch off top of each artichoke.

Using ascissors, trim tips off all artichoke leaves. Repeat with remaining artichokes.

In a large pot, bring 8 qts water to a boil and drop in artichokes. Cover tightly and boil on high heat for 30-35 minutes until artichokes are semi-tender and have lost their green color.

Preheat oven to 400° F.Meanwhile mix ingredients for stuffing.

Combine parsley, black pepper, breadcrumbs, Romano and garlic in a bowl.

Mix well.

When artichokes are cooked, place them upside down too drain and cool slightly, then open leaves. Starting from outside leaves and working to center, sprinkle in stuffing. Place each stuffed artichoke upright in a baking pan. Drizzle 1/4 cup oil over each artichoke so oil seeps into stuffing.

Bake for 30-40 minutes until they are slightly browned on top.
