Southwestern - Watermelon Salsa

2 cups watermelon, seeded and coarsely chopped
2 Tbs. chopped onion
2 Tbs. Water chestnut, chopped
2 to 4 jalapenoes chopped
1 Tbs. Balsamic Vinegar
1/4 tsp. salt
1/2 tsp minced garlic


Mix all together and refrigerate for 2 hours.

Serve with tortilla chips.

6 cups chopped ripe tomatoes, drained 2 tbls minced garlic 2 tbls cumin 2 tbls coriander, ground 1 purple onion, chopped 2 or 3 jalepenos, seeds out, chopped Juice of 2 limes 3 tbls salt (or more to taste)Combine all ingredients. Canned tomatoes can be substituted for fresh, but adjust amount of salt used.

Spicy Black Bean Salsa 2 cans (15 oz. each) black beans, drained 1 can (16 oz) corn, drained 1/2 cup cilantro, coarsely chopped 6 Tbl. lime juice 6 Tbl. vegetable oil (add 1T. at a time until you decide how much oil you like) 1/2 cup red onion, chopped fine 1 1/2 tsp. cumin 1 can (10 oz.) Rotel tomatoes, pureed 1/2 to 3/4 cup medium picante sauce Salt and Pepper Cayenne pepper to taste Mix, cover and refrigerate 24 hours. You may add a chopped avocado just before serving.
