Southwestern - Turkey - Southwest Mini Meatloaf

1 1/2 lbs ground turkey
5 cups baked corn tortilla chips
1 can (101/2 oz) black beans
1 can (8 oz) corn kernels, drained
1/2 cup minced scallions
1/2 cup finely chopped red bell peppers
1 can (5 oz) evaporated milk
1 large egg
1 Tbsp chili powder
2 tsp salt
1 tsp ground cumin
1 Tbsp vegetable oil

Mix all the ingredients except the oil in a large bowl until very well blended and some of the beans are mashed. Divide the mixture in half. With one half, form 8 equal balls. Freeze on a cookie sheet until firm, then transfer to an airtight container and freeze.
Shape the remaining mixture into 4 oval loaves.

Heat the oil in a large, non stick, if available, skillet over medium heat. Brown the loaves 2 to 4 minutes, turning once. Add 1/4 cup water, cover, reduce heat and simmer 14 to 18 minutes until meat is no longer pink at the center.

Makes 4 loaves and 8 meat balls.

Taco seasoning Mix 15 oz. black beans, drained, rinsed 11 oz. can Mexi-corn, drained 8 oz. shredded light Mexican cheese blend 14.5 oz. can stewed tomatoes, undrained, chopped 4.5 oz can chopped green chiles Heat oven to 350. Spray 13x9 glass baking dish with nonstick cooking spray. Cut opening in one side of each chile. Carefuly remove seeds and membranes, leaving top stem intact; rinse and drain well. Spray skillet with cooking spray. Add ground turkey; cook over med-high heat for 7 minutes or until no longer pink. Stirring
