Southwestern - Jalapeno Cheese Squares
1 lb. bacon2 cups shredded Cheddar cheese
1/3 cup chopped jalapeno peppers (the pickled ones in a jar)
12 eggs, beaten
Preheat oven to 350 degrees F.
Fry bacon until crisp, drain and crumble. Spray Pam in a 9 x 11 inch casserole dish.
Chop and seed peppers and line bottom of dish. Sprinkle bacon evenly over peppers. Add shredded cheese.
Beat eggs until fluffy and pour on top of cheese. Bake for 20 to 25 minutes at 350 degrees. Cut in squares and serve upside down while hot.

Submitted by Becky 2 (10 3/4 oz.) cans cheddar cheese soup 1 can (10 oz.) stewed tomatoes 1 can ( 8 oz.) chopped chilies Mix all ingredients together. Heat to blend. Refrigerate for 24 hours to thicken. Reheat in fondue pot and serve warm with corn chips. Yields 4 cups
Southwestern - Appetizer - Mexican Fondue
Submitted by Becky 2 (10 3/4 oz.) cans cheddar cheese soup 1 can (10 oz.) stewed tomatoes 1 can ( 8 oz.) chopped chilies Mix all ingredients together. Heat to blend. Refrigerate for 24 hours to thicken. Reheat in fondue pot and serve warm with corn chips. Yields 4 cups

Pepperidge Farm Frozen mini Puff Pastry shells 1 medium ripe avocado, peeled, pitted and cubed 1/3 cup mayo 1 Tbl. lime juice 1 and 1/4 tsp. minced garlic 3/4 tsp. chili powder 1/2 tsp. salt 1/3 cup canned green chilies, minced dash cayenne pepper or tabasco sauce cucumber or tomato, finely chopped for garnish Prepare pastry shells according to package directions. Coarsely mash avocado. Mix with mayonnaise, lime juice, garlic, chili powder, salt, green chilies, and cayenne. Spoon avocado mixture into pastry shells, mounding high. Garnish with cucumber and tomato. Serve cold.
