Southwestern - Green Chile Cheese And Rice Bake

8 oz. Monterey Jack cheese
2 cups sour cream
4 oz. canned chopped green chilis
4 cups cooked rice
Salt and pepper to taste
1/2 cup grated Cheddar cheese


Preheat oven to 350° F. and grease a 2-qt. casserole.

Cut Monterey Jack cheese into strips.

Mix sour cream and green chilis together in a small bowl.

Alternate layers of rice, Monterey Jack cheese and sour cream in a greased 2-qt. casserole pan. Bake for 30 minutes. After 15 minutes of baking, sprinkle top of casserole with grated Cheddar cheese.

3 cups cooked rice 1 (16 oz.) can Mexican style diced tomatoes 1 onion 1 bell pepper 1 cup shredded cheese (Velveeta works best) Dice onion and bell pepper and saute in 1 TBSP. butter until done. Mix all ingredients together and place in a baking dish. Bake at 350 degrees for 20 minutes.

2 Tbl. oil 1 1/2 cups white rice 1 small green pepper, chopped 1 medium onion, chopped 1-3 crushed cloves of garlic (to your taste) 1 (16 oz.) can chopped tomatoes (with or without jalapenos) 2 cups water Salt and Pepper Heat oil in large skillet and add rice stirring frequently so that it does not burn. This should take about 3-5 minutes. (The ends of the rice should be starting to turn brown.) Add the other ingredients all at once, stirring to mix ingredients. Cover tightly; adjust heat to slow boil. Cook for 15-20 minutes.
