Southwestern - Enchilada Extravaganza

2-3 lbs. chicken, boiled and diced
1/2 Cup onion diced
1 (10 3/4 oz.) can condensed tomato soup, diluted
1/2 Cup green pepper, diced
2 tomatoes, diced
2 tsp. chili powder
1/4 tsp. garlic powder
1/2 tsp. tobasco sauce
1/2 tsp. salt
1 can refried beans
tortillas, about 10-12
16 oz. cheddar cheese, shredded

Preheat oven to 350 degrees F.

Combine all ingredients except tortillas and cheese.

Spoon some mixture into each tortilla and roll up.

Place in a 9x13-inch pan. Cover tortillas with remaining mixture and sauce. Sprinkle on cheese.

Bake at 350 F. for 30 minutes.

1 (8 oz.) container light sour cream 1 (8 oz.) container nonfat plain yogurt 1 (10 3/4 ounce) can fat-free cream of chicken soup 1 (4 oz.) can diced chili peppers 12 (7 inch) white corn tortillas 4 ounces lowfat cheddar cheese 1 1/2 cups cooked chicken breast, chopped 1/4 cup sliced green onions Heat oven to 350 degrees. Spray 13x9" baking dish with nonstick spray. In medium bowl combine sour cream, yogurt, soup and chiles. Heat a flour tortilla until soft.
