Southwestern - Appetizer - Green Chili Bean Dip

2 can (16 oz.) refried beans
1 can (4 oz.) diced green chilies
1/2 cup Mexican tomato sauce
1/2 cup finely chopped onion


Mix all ingredients. Cover tightly and refrigerate overnight. Serve hot or cold as a dip with tortilla chips. Heating increases the hot, spicy quality of the dip.

Makes about 3 cups

Pepperidge Farm Frozen mini Puff Pastry shells 1 medium ripe avocado, peeled, pitted and cubed 1/3 cup mayo 1 Tbl. lime juice 1 and 1/4 tsp. minced garlic 3/4 tsp. chili powder 1/2 tsp. salt 1/3 cup canned green chilies, minced dash cayenne pepper or tabasco sauce cucumber or tomato, finely chopped for garnish Prepare pastry shells according to package directions. Coarsely mash avocado. Mix with mayonnaise, lime juice, garlic, chili powder, salt, green chilies, and cayenne. Spoon avocado mixture into pastry shells, mounding high. Garnish with cucumber and tomato. Serve cold.

A make-ahead cheese spread. Serve with corn chips, tortillas, or your favorite assortment of crackers. 4 ounces cream cheese, softened 1/4 cup sour cream 1 cup shredded cheddar cheese 1 cup shredded Monterey Jack cheese 1 (4-oz.) can Diced Green Chiles 3 tablespoons sliced green onion 1/2 teaspoon hot pepper sauce 1/2 teaspoon chili powder 1/4 teaspoon ground cumin Combine cream cheese and sour cream in medium bowl. Stir in cheddar cheese, Monterey Jack cheese, chiles, green onion, hot pepper sauce, chili powder and cumin. Mix well. Refrigerate until ready to serve. Yields: 2 cups
