Southwestern - Appetizer - Beer-battered Fried Avocado Wedges With Salsa

1 cup lager beer or ale
1 cup all-purpose flour
1-1/2 teaspoons paprika
2 cloves garlic, chopped finely
2 avocados
Vegetable oil as needed for deep frying
Salt as needed
1 cup purchased salsa


Make beer batter, whisk together beer, flour, paprika, and garlic until well blended. Let stand at least 2 hours.

Peel avocados; cut each into 6 wedges. Dredge 6 wedges in reserved beer batter. Deep fry in hot oil until golden about 3 minutes. Repeat with remaining wedges. Serve 3 wedges with 1/4 cup salsa

One package flour tortillas oil for frying 1 can refried beans 1/2 pkg. taco seasoning shredded Monterey Jack cheese Guacamole Let tortillas come to room temperature. Cut into quarters with scissors. 8 cups corn tortilla chips 1 1/2 cups cooked chicken 2/3 cup barbecue sauce 15 oz. chili beans in sauce, undrained 2 1/4 oz. can sliced olives, drained 2-3 med. Roma tomatoes, chopped (1 cup) 3 cups shredded Colby-Jack cheese (12 oz.) Heat coals or gas grill for direct heat. Spray tw0-30x18 inch pieces of heavy duty foil with cooking spray. Spread tortilla chips on centers of foil pieces. Mix chicken and barbecue sauce. Spoon chili beans, chicken mixture, olives, tomatoes and cheese on chips. Wrap foil securely around tortilla chips. Cover and grill foil packets, seam sides up, 4-6 inches
