Soups - Sauerkraut Soup

3 Tbls. bacon drippings
1/2 cup chopped onion
1/2 clove garlic, minced
1/2 lb. diced lean pork
1 pkg. (16 oz.) sauerkraut, drained, and chopped
6 cups chicken stock
1 1/2 Tbls. butter
1 1/2 Tbls. flour
1 tsp. sugar

In Dutch oven heat bacon drippings; add onion and cook until brown. Add garlic and pork; cook over low heat about 20 minutes.Add sauerkraut and chicken stock; cook over medium heat about 45 minutes.

In skillet let melt butter; stir in enough flour to make a thick paste. Stir flour mixture into small amount of soup, stirring until smooth. Add to soup.

1 1/2 tbsp olive oil 3 garlic cloves, minced 6 cups chicken or turkey broth (may use canned) 1 tbsp fresh oregano or 1 tsp dried 1/2 c small elbow macaroni, cooked 3 cups thinly sliced fresh spinach 1 1/2 cups sliced cooked pork 8 tbsp grated Parmesan cheese Heat olive oil in saucepan medium-low. Add garlic and stir until beginning to colour, about 2 minutes. Add broth and oregano. Increase to high, add pasta and heat through. Add spinach and cook until tender, about 5 minutes longer. Add pork and 3 tbsp Parmesan cheese. Simmer 1 minute. Ladle soup into
