Soups - Curried Pumpkin Soup

1 small onion, chopped
1 tsp. cooking oil
2 cups chicken broth
1 1/2 cups cooked or canned pumpkin
1 TBL. lemon juice
1 tsp. curry powder
1 tsp. sugar
1/2 tsp. salt, optional
Dash pepper
1/2 cup half & half cream or evaporated milk
Chopped fresh parsley, optional

In a saucepan over medium heat, saute onion in oil until tender. Add broth, pumpkin, lemon juice,curry powder, sugar, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer for 15 minutes.

Stir in cream; heat through.

Garnish with parsley if desired.

1/4 c butter 1 lg onion -- chopped 3/4 c scallions -- sliced 4 c pumpkin puree (fresh is best) 4 c vegetable broth 1 bay leaf 1 t brown sugar 1 Tablespoon curry powder 1/8 t nutmeg 1 t parsley -- finely chopped 2 c half and half salt and pepper -- to taste roasted pumpkin seeds or 2 TB chives -- finely chopped 1 c sour cream -- optional In a medium-large saucepan, saute the onions and scallions in butter until golden brown. Stir in the pumpkin. Add the broth, bay leaf, brown sugar, curry powder, nutmeg, and parsley

Olive oil or canola oil 1 medium white onion (diced) 1 garlic clove diced 2 cups pumpkin purée 4 cups chicken stock Bay leaf Pinch sugar 1/3 tsp. curry powder, or to your taste Pinch nutmeg 2 cups half-and-half Salt and pepper Toasted coconut Slowly sauté onion and garlic in oil until transparent, about 5 minutes. Add pumpkin puree and chicken stock, bay leaf, sugar, curry, nutmeg and mix well. Bring to boil, then lower heat to simmer. Cook 20 - 30 minutes. Taste for seasoning. Add half-and-half and simmer another 10 minutes. Remove from heat and cool. Blend in batches
