Soups - Cheese - Wisconsin Cheddar Cheese Soup By Mai

1/4 cup butter
1/4 cup all-purpose flour
2 1/2 cups milk
1 cup beer or water
2 teaspoons Worcestershire sauce
1 1/2 teaspoons dry mustard
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups shredded sharp Cheddar
Croutons, optional


Melt butter in a large saucepan over medium heat. Stir in flour until smooth; cook 1 minute, stirring constantly. Stir in milk, beer, Worcestershire, mustard, salt, pepper. Heat to a boil, stirring frequently. Reduce heat; simmer 10 minutes, stirring often.

Stir in cheese until melted. Garnish with croutons. (Stir in salsa, bacon bits, cilantro for Tex-Mex taste.) Makes 4 servings.

1/2 cup finely chopped onions 4 Tbsp. butter 4 Tbsp. flour 1 1/2 Tbsp. cornstarch 4 cups chicken stock 4 cups milk 1 cup cooked, chopped carrots 1 cup cooked, chopped celery chopped parsley 1/8 tsp. paprika 1/2 lb. pkg. Wisconsin Cheddar cheese, finely cut Saute onions in butter until tender and glassy. Add flour and cornstarch, blending well. Add stock and milk gradually, stirring constantly. When boiling, add carrots, celery, paprika and cheese. Cook over low heat until cheese is melted. Add salt, if necessary. Serve hot with finely chopped parsley.
