Soups - Beef - Taco Soup By Becky

Recipe attributed to Roxanne Barone

2 lb ground beef
1 medium onion, finely chopped
1 can, 28 oz, tomatoes
1 can, 15 oz, tomato sauce
1 c water
1 can, 15 oz, pinto beans, rinsed and drained
1 can, 15 1/4 oz, whole kernel corn, drained
1 envelope taco seasoning
Optional ingredients:
Shredded cheddar cheese
sliced avocado
chopped tomato
Serve with: corn chips


Brown ground beef and onion in large sauce pan; drain.

Puree tomatoes in their own liquid. Add to pan: pureed tomatoes, tomato sauce, water, beans, corn and taco seasoning. Bring to boil, then reduce heat and simmer 5 minutes.

If desired, top each serving with optional ingredients and serve with chips.

Makes 10 servings or 2 1/2 quarts.

1 1/2 lbs. ground beef(can use part ground turkey) 1/4 chopped onion 1 (16 oz.) can diced tomatoes with liquid 1 (16 oz.) can kidney beans with liquid 1 (17 oz.) can corn 1 (8 oz.) can tomato sauce 1 packet of taco seasoning mix Brown gound beef and onion; drain. 1 lb. ground beef, browned 2 (15 oz.) cans tomato sauce 1 (14 to 15 oz.) can corn (undrained) 1 (15 to 16 oz.) can kidney beans (use the juice) 1 (14 to 15 oz.) can stewed tomatoes 4 cups water 2 packets taco seasoning shredded cheddar cheese sour cream tortilla chips Combine all ingredients and simmer for at least an hour. Serve over tortilla chips. Top with cheese and sour cream.
