Snacks - Sugar-coated Pecans

1 tablespoon egg white
2 cups pecan halves
1/4 cup sugar
2 teaspoons ground cinnamon

Preheat oven to 300 degrees.

In a bowl, beat egg white until foamy. Add pecans and toss until well coated.

Combine sugar and cinnamon; sprinkle over pecans and toss to coat. Spread in a single layer on an ungreased baking sheet. Bake at 300'F for 30 minutes or until browned. Cool on waxed paper.

Yield: 3 cups.

1 cup pecans 1 cup slivered almonds 1 cup walnuts 2 egg whites 1 cup sugar 1/4 tsp. salt 1/2 cup margarine Preheat oven to 325° F.Melt margarine on sheet cake pan. Beat egg whites until foamy. Add sugar and salt. Fold in nuts. Bake at 325 degrees for 35 minutes, stirring every 10 minutes. 1 egg white 1 tbsp cold water 1/8 tsp salt 1/2 cup dark brown sugar 1/2 cup white sugar 1 tsp cinnamon 1/2 tsp nutmeg 1 lb pecans In large mixing bowl, combine first 3 ingredients and whip until mixture is frothy and stiff. In large paper bag, place all dry ingredients. Coat pecans in egg white mixture, then put into paper bag and shake vigorously so that dry mixture sticks to pecans.
