Snacks - Popcorn - Peanut Butter Popcorn

3 quarts popped corn
1-1/2 cups whole almonds, optional
1 cup sugar
1/2 cup honey
1/2 cup light corn syrup
1 cup peanut butter
1 teaspoon vanilla


Butter sides of a 1-1/2-quart saucepan. Add sugar, honey and syrup. Boil, stirring constantly for 2 minutes. Remove from heat and stir in peanut butter, vanilla and almonds. Pour over popcorn; stir well. Let cool.

Makes 3 quarts

10 c popped popcorn 1/2 c sugar 1/2 c light corn syrup 1/2 c creamy peanut butter 1/2 tsp vanilla Butter a 13 by 9 pan. Place popcorn in a large bowl and set aside. Bring sugar and corn syrup to boil over medium heat, stirring constantly. Boil 1 minute, then remove from heat. Add peanut butter and vanilla, stir to mix well. Pour over popcorn and mix until well coated. Press into prepared pan. Cool slightly before cutting. Makes 2 dozen.
