Snacks - Caramel Corn

2 cups brown sugar - firmly packed
1/2 cup light corn syrup
1/2 lb. margarine
1/4 tsp. cream of tartar
1 tsp. salt
1 tsp. baking soda
6 qt. popped popcorn


Preheat oven to 200° F.

In a 2 1/2 quart saucepan combine brown sugar, corn syrup, butter, cream of tartar and salt. Stirring constantly over, boil to hard boil stage 260º (about 5 minutes) . Remove from heat, stir in baking soda quickly. Pour at once over popcorn in a large roasting pan. Bake for 1 hour, stirring 2 or 3 times during baking.

Turn out on cookie sheet or waxed paper. Cool completely. Break apart and store in airtight container.

1/4 cup white corn syrup 1/4 pound butter or margarine 1 cup light brown sugar pinch of cream of tartar 1/2 teaspoon vanilla 1/4 teaspoon baking soda 4 quarts popped corn Heat syrup, butter and brown sugar to 218 degrees on candy thermometer or to the softball stage. Add cream of tartar, vanilla and soda. Pour mixture over popped corn and bake on greased cookie sheet in 200 degree oven for 1 hour (or 350 degree oven for 25 minutes). Cool and eat. Can be stored in Ziploc bags in freezer.
