Sauces - Tomato - Sweet Chili Sauce By Becky

6 onions
30 large tomatoes
1 Tbsp. salt
2 red sweet peppers
1 Tbsp. cinnamon
2 c. celery
2 green sweet peppers
2 c. sugar
2 c. vinegar
1 Tbsp. cloves
1 Tbsp. allspice


Chop onions, pepper, celery and tomatoes. Combine all ingredients. Cook slow; stir frequently until thick, 2 hours. More vinegar and sugar may be added if desired. Put in jars and seal or freeze.

8 qts. tomatoes 4 green bell peppers 4 large onions 1/4 tsp. allspice 1/2 tsp. cinnamon 1/2 tsp. ground cloves 4 c. brown sugar 1 qt. vinegar 2 tsp. salt 1 tsp. pepper Peel tomatoes and cut in eighths. Chop peppers and onions. Combine all ingredients in large pan and simmer over low heat for 3 hours or until desired thickness, stirring occasionally to avoid scorching. Bottle as desired.
