Sauces - Meatless Red Sauce Microwave

1 medium onion, finely chopped
4 cloves garlic, pressed or minced
2 tbsp. olive oil
2 lb. fresh tomatoes, coarsely chopped
1/2 cup dry white wine or water
1 bay leaf
1/2 tsp. salt
1/4 tsp. black pepper

Place onion, garlic and olive oil in a large bowl.

Microwave, uncovered, on high for 3 minutes, or until onion begins to wilt.

Add remaining ingredients, cover bowl, and microwave on high for 10 minutes, or until tomatoes soften.

Remove cover and stir. Continue to microwave, uncovered, on high for 10 minutes more, or until tomatoes have collapsed and liquid is thickened and saucy.

Remove bay leaf and use sauce right away or let cool.

Sauce may be refrigerated, covered, for up to 2 weeks and reheated before serving.
