Sauces - Fruit - Bette's Spiced Cranberries

1 pkg. (12 oz.) fresh cranberries
1/3 cup water
9 whole cloves
9 whole allspice
1 1/2 stick cinnamon, broken into pieces
1/8 tsp. (scant) mace
3/4 cup brown sugar


Place berries in a covered pot; add water and whole spices, tied up in a cheesecloth bag with the powdered mace. Bring to boil, reduce heat and simmer, covered, about 25 minutes. Remove spice bag and discard. "Smash" berries slightly and, while hot, add the brown sugar. Cool before serving.

2 cups blackberries 1/2 cup water 1/4 cup sugar 1 teaspoon fresh lemon juice 2 teaspoons cornstarch In a small sauce pan combine 1 cup blackberries, 1/4 cup water, sugar and lemon juice. Stir and bring to a boil. Turn down heat, simmer 7 to 10 minutes. Mix the cornstarch into 1/4 cup water until dissolved and add to blackberry mixture; stir until it thickens, then add the remaining 1 cup berries. Cook 3 minutes on low heat. Makes about 1 cup

2 C fresh cranberries 1 c sugar 1/4 c Apple Brandy (Calvados), or Apple jack if you can not find Put into a glass baking dish, and bake in a preheated 275 degree oven, stir every so often. Make sure you cover with foil too. Bake for approx 1 1/2 hours to 2 hours. It is best to make up to 6 weeks early. It mellows as it ages, and gets better, and better.
