Sauces - Cilantro Pesto

2 cups fresh cilantro leaves
1/4 cup pine nuts
1/4 cup freshly grated Parmesan
2 cloves garlic
1/4 cup olive oil
2 tablespoons lime juice


Process all ingredients in a food processor until smooth. Yield:1-1/2 cups

Add the garlic and saute briefly. Stir in the pepper strips and sweat them over low heat for 20 to 25 minutes. Add the tomatoes and salt and cook
