Salads And Dressings - Vegetable - Mock Potato Salad

20 Ounces Cauliflower -- frozen, bag
1/4 cup celery -- chopped
1/4 cup onion -- chopped
6 eggs -- boiled and chopped
1 cup mayonnaise
1/2 cup sour cream
1/2 cup cheddar cheese – shredded
2 teaspoons yellow mustard


Bake frozen cauliflower uncovered at 325 for one hour to dry. Let cauliflower cool and roughly chop. Mix all ingredients together, cover and refrigerate. Add salt, pepper, etc to taste.

2 cups thinly sliced onions ice water 2 tablespoon fresh mint, chopped 1 cup apple cider vinegar 2/3 cup sugar Cover the sliced onions with ice water, soak overnight, drain add the chopped mint, vinegar, and sugar. Stir well until sugar has dissolved. Serve, divided on lettuce leaves or serve in a tossed green salad.
