Salads And Dressings - Vegetable - Marinated Broccoli Salad

Serves: 8

4 c. broccoli florets
4 medium carrots, thinly sliced
2 small onions, sliced and separated into rings
1 can (2-1/4 oz.) sliced ripe olives, drained
1 jar (2 oz.) diced pimientos, drained
1 bottle (8 oz.) fat-free Italian salad dressing
1 tsp. sugar


In a bowl, combine the first 5 ingredients. Add dressing and sugar; toss to coat. Cover and refrigerate for at least 4 hours, stirring occasionally. Just before serving stir in walnuts if desired.

Nutritional Analysis: One serving equals: 59 calories, 378 mg sodium, 0 cholesterol, 11 gm carbohydrate, 2 gm protein, 1 gm fat 3 gm fiber. ++++ Diabetic Exchanges: 2 vegetable

3 to 4 stalks broccoli stems 1/2 small carrot, julienne cut 1/4 tsp. salt 1 tsp. finely chopped garlic 1 tsp. sesame oil 1/2 tsp. or to taste hot pepper paste Cut stems off broccoli crown. Cut outer layer off the stems and cut stems into thin slices and julienne. In a bowl mix broccoli, carrot, and salt. Mix well and cover and set aside for 30 minutes. The salt marinates the veggies and makes them tender. Add garlic, oil and hot pepper paste, toss and either serve orrefrigerate to serve later.

1 lb. fresh asparagus 1 red pepper, julienned 1 bunch green onions Wash asparagus and cut into 4 to 5 inch spears. You want the woody parts too. Clean and cut red pepper into thin strips. Clean the onions and cut off the green part. You are going to wilt the long green part in boiling water briefly sothey are pliable. Remove and put into ice water to stop cooking process. If the green part is too short, knot one end and tear from unknoted end to get a long piece of green.Divide asparagus
