Salads And Dressings - Vegetable - Fiddlehead Salad

1 pound fiddlehead ferns
2 teaspoons sugar
3 tablespoons dark soy sauce
1 1/2 tablespoons sesame oil
1 1/2 tablespoons rice wine vinegar
1 1/2 tablespoons sesame seeds, toasted


In a large pot of boiling, lightly salted water, blanch fiddleheads until just tender. Drain well. In a large bowl combine sugar, soy sauce and sesame oil. Add fiddleheads and toss to coat. Sprinkle with sesame seeds. Serve warm or at room temperature. Yield: 4 servings.

6 slices bacon, chopped Yellow cornmeal, for coating Salt and cayenne pepper 1 lb. okra, cut crosswise into 1/2" thick slices 1 large ripe tomato, diced 1 small yellow onion, diced 1 small green pepper, diced Salt and pepper In frying pan, cook bacon until crisp; set aside and reserve bacon drippings. In small bowl, toss okra with cornmeal, salt and cayenne pepper. Fry okra in bacon drippings until crisp. Add fried okra with tomato, onion and bell pepper. Toss with salt and pepper. Sprinkle with bacon and serve.
