Salads And Dressings - Tomato - Tomato Bean Cups

8 whole, ripe tomatoes
1 can (16 oz.) cannelini beans, drained
1 large sweet onion, chopped
1/4 cup extra virgin olive oil
juice of 2 lemons
1/3 cup fresh basil, chopped
1/3 cup flat leaf parsley, chopped
6 sun dried tomatoes, drained well and chopped
salt and pepper to taste


Scoop out the insides of the tomatoes. Salt the inside of the tomato. Drain upside down for 30 minutes.

Combine remaining ingredients. Fill the tomatoes with the mixture and serve at room temperature.

6 medium tomatoes 1 can (8 oz.) white kidney beans or cannellini beans drained and rinsed 1 (8 oz. can) tuna in water juice of one lemon 1 small sweet onion chopped finely 1 small stalk celery chopped finely 3 tablespoon chopped Italian parsely, leave only salt and pepper to taste 8 tablespoons olive oil Drain the tuna and rinse under cold water drain well again. Sprinkle with lemon juice let sit for 10 minutes and rinse and squeeze dry. Don't leave lemon juice on longer it will break down the fish. Cut tops off tomatoes, squeeze tomatoes gently

On a platter arrange tomato slices alternately with mozzarella and top with basil. Drizzle salad with vinaigrette. Serves 2.
