Salads And Dressings - Tomato - Mozzarella And Beefsteak Tomatoes With Onions

8 (1-oz.) slices mozzarella
8 (1/2-inch) slices beef steak tomatoes
8 pieces red onion, thinly sliced
Basil leaves and grilled crusty bread to garnish
Kosher salt and cracked pepper to taste
Basil Vinaigrette


Alternate the tomatoes, cheese and onions on dinner plate in a shingle pattern. Add salt and pepper to taste. Spoon the vinaigrette over the perimeter of plate. Garnish with basil leaves and grilled crusty bread.



Basil Vinaigrette

1/4 cup red wine vinegar
1 Tbsp. garlic, chopped
1 tsp. shallots, chopped
2 Tbsp. basil leaves
1 tsp. lemon juice
1 tsp. honey
1/2 cup olive oil
Kosher salt, cracked pepper and jalapeño Tabasco to taste


Puree all ingredients, except oil, until smooth. Slowly add the oil until it thickens. Season to taste.

Summer Tomato Salad with Brie(serves 6-8) 5 medium fresh tomatoes, cut into chunks, save juice 1/2 lb. Brie cheese, rind removed, torn into pieces (freeze the Brie for 20 minutes to remove rind) 1/2 cup fresh basil, snipped into strips with scissors 3 large garlic cloves, minced 1/3 cup olive oil 1/2 tsp. salt 1/2 lb. fresh pasta 1/2 cup freshly grated Parmesan Combine tomatoes and juice, Brie, basil, garlic, olive oil and salt. Leave at room temperature at least 2 hours. Cook pasta as directed on pkg. Drain and immediately toss with tomato mixture. Brie should melt. Mix. Sprinkle
