Salads And Dressings - Tomato - Insalata Caprese By Yankeette

4 large ripe tomatoes diced
1 lb fresh mozzarella cheese, sliced
1/3 cup fresh basil leaves
1/4 cup extra virgin olive oil
fine sea salt to taste
freshly ground black pepper to taste


Slice the tomatoes and mozzarella 1/4 inch thick. On a large platter, arrange tomatoe and mozzarella slices and basil leaves, alternating and overlapping each.

Drizzle salad with olive oil; Sprinkle with salt and pepper. Garnish with imported olives
