Salads And Dressings - Spinach Salad With Walnuts And Raisins

1 (2 lb.) spinach, washed
1 cup chopped walnuts or pecans
1 cup raisins

For the dressing:
2/3 cup sugar
2/3 cup cider vinegar
2 cup oil - do not use olive oil
1/4 cup grated onion
1 tsp. salt
2 tsp. dry mustard
2 tsp. caraway seed

Combine all dressing ingredients in a blender and mix well. Pour over salad.

The salad: 1 pound fresh spinach, 1 medium red onion, sliced and separated into rings 2 eggs, hard cooked and sliced. Dressing: 1 cup walnuts, finely chopped 1/4 cup cider vinegar 2 tablespoons olive oil 2 tablespoons sugar 1/4 cup bottled Teriyaki sauce Freshly ground black pepper Whisk together, vinegar, sugar, oil and Teriyaki. Mix in the walnuts Pour over the salad and toss to serve Serves 6

Salads And Dressings - Spinach With Pine Nuts And Raisins
2 1/2 pounds spinach 2 to 3 tablespoons olive oil 2 small yellow onions or 6 green onions, minced 4 tablespoons raisins, plumped in hot water and drained 4 tablespoons pine nuts, toasted Salt and freshly ground pepper to taste Rinse spinach well and remove stems. Place in a large sauté pan with only rinsing water clinging to leaves. Cook over medium heat, turning as needed until wilted, just a few minutes. Drain well and set aside. Add olive oil to pan and place over medium heat. Add onions and sauté until tender, about 8 minutes.
