Salads And Dressings - Souffle Salad

Souffle Salad

1 (3 ounce) pkg. lemon or lime gelatin
1/4 tea. salt
1 cup boiling water
1/2 cup cold water
1 to 2 Tbl. vinegar or lemon juice
1/4 cup mayonnaise
1 1/2 to 2 1/2 cups raw or cooked vegetables*

Dissolve gelatin and salt in boiling water. Add cold water, vinegar, and mayonnaise. Beat to blend well. Pour into freezing tray and place in freezer 15 to 20 minutes, or until firm about 1 inch around edge and soft in center.

Pour into a bowl and whip until fluffy and thick. Fold in vegetables. Pour into a 1 quart mold and chill until firm.

*Vegetables - 1/3 cup each diced raw cauliflower, shredded carrots, sliced radishes, diced celery and 2 Tbls. diced green pepper.

Or, 3/4 cup of finely chopped cabbage and celery, and 1/4 cup of finely chopped bell pepper.

1 (2 pound) spaghetti squah 3 tablespoons white or regular balsamic vinegar 2 teaspoons olive oil 1/4 teaspoon salt 1/4 teaspoon fresh ground pepper 12 cherry tomatoes, halved 1 green bell pepper, chopped 2 green onions, thinly sliced 2 tablespoons capers 2 tablespoons chopped fresh cilantro Pierce squash with a fork. Place in a glass pie plate. Microwave at High for 7 minutes. Turn squash and microwave for 11 minutes or until tender. Cool. 1-2/3 cups chopped ripe tomatoes 1/2 large bell pepper, chopped 2 cups chopped onions 2 Tblsp. salad oil 1/3 cup sugar 1/2 cup vinegar 3 tsp. Accent or MSG (optional) 1/2 tsp. garlic salt salt and pepper to taste Combine tomatoes, bell pepper and onions. Set aside. Mix oil, sugar, vinegar, Accent, garlic, salt and pepper. Pour over vegetables. Place in covered jar and let stand several hours. Refrigerate.
