Salads And Dressings - Slaw - Power Salad

2 cups red cabbage, shredded
19-ounce can white(cannellini) beans, drained and rinsed
11-ounce can mandarin oranges, drained
1/3 cup walnuts, toasted
2 large scallions, sliced, with green tops
3 Tbs. extra virgin olive oil
2 Tbs. balsamic vinegar
2 Tbs. orange juice
Salt and pepper, to taste


Put first five ingredients in a bowl. Whisk together oil, vinegar, juice. Toss all.

2 pkgs Ramen Noodles (break up in pkg before opening) 1 small pkg of sliced almonds 1/2 C Sesame Seeds 1/2 C Butter 1 pkg prepared Cole Slaw Mix 5 Green Onions (chopped) Dressing: 1 C Oil 1/2 C Vinegar 1 C Sugar 2 tsp Soy Sauce Saute broken noodles in butter. Add almonds and sesame seeds and continue to saute. Remove from heat and let cool. Mix in Cole Slaw mix and onions. Prepare dressing. Add dressing to mixture. Refrigerate overnight. Mix before serving.
