Salads And Dressings - Slaw - Lemon Coleslaw

2 tablespoons low-fat sour cream or creamy non- fat plain yogurt
2 tablespoons mayonnaise
1/2 teaspoon finely grated fresh lemon zest
4 teaspoons fresh lemon juice
1 teaspoon sugar or SPLENDA
1/4 teaspoon salt
1/8 teaspoon black pepper
1 lb green cabbage, thinly sliced (4 cups)
2 carrots, cut into julienne strips or coarsely grated
2-3 scallions, thinly sliced diagonally
1/2 cup chopped fresh flat-leaf parsley (optional)

Whisk together sour cream, mayonnaise, zest, lemon juice, sugar, salt, and pepper in a large bowl until sugar is dissolved. Add cabbage, carrots, scallions, and parsley and toss well. Chill, covered, 1 hour to allow flavors to develop. Season with salt and pepper.

Makes 4 servings.

Each serving contains about 61 calories and 2 grams fat.

1. If using yogurt, try to drain some of the water from the yogurt, and DO NOT dilute this dressing with water. The cabbage gives off water as it sits, and extra liquid makes it runny.

1 bulb anise (fennel) 2 navel oranges 1 red bell pepper, slivered 1 cup red onion slices 2-3 Tbsp. olive oil 1 Tbsp balsamic vinegar salt and pepper to taste Remove leaves from anise and cut stalks and bulb into bitesized (small) pieces. Cut peel and white pith from oranges and cut into supremes (holding the orange, cut between sections to release, then cut supremes in half. Add to anise along with pepper and onion. Add oil and vinegar and toss well. Add salt and pepper to taste.

Head of Cabbage 1/3 cup mayonnaise 1 tablespoon vinegar 2 teaspoons sugar 1/2 teaspoon salt 1/2 teaspoon celery seed 2 tablespoons horseradish Shred about 3 cups cabbage, extra fine. Mix above ingredients together and toss.
