Salads And Dressings - Slaw - Country Apple Coleslaw

1/4 cup red wine vinegar
3 tablespoons brown sugar
1 teaspoon vegetable oil
1/4 teaspoon salt
1 (10-ounce) package coleslaw
2 cups unpeeled red apple
1/2 cup raisins


Combine vinegar, brown sugar, oil, and salt in a microwave-safe bowl. Microwave at high 1 minute.

Add coleslaw, apple, and raisins; toss well to coat. Serve chilled or at room temperature.

1 1/2 lb. zucchini (3 medium) 1 medium sweet onion, very thinly sliced 1 1/2 tsp. coarse salt 1 small red bell pepper seeded and diced 1/4 cup cider vinegar 3 TBSP. frozen apple juice concentrate 2 TBSP. chopped fresh basil salt and pepper to taste Place zucchini and onion in a colander set over a bowl.
