Salads And Dressings - Rice - Spanish Rice Salad

2 cups chilled rice* (cooked in chicken broth)
4 tomatoes -- quartered
1 cup chopped bell peppers
1 cup chopped celery
1/4 cup chopped onion
1/4 cup chopped pimiento
3 tablespoons white wine
1 Pinch cumin
2 teaspoons mixed Italian seasoning
Salt and pepper to taste


Combine all ingredients; toss together and serve. Serves 8 (80 calories per serving)

NOTES : Pre-cook rice in chicken broth, then chill before using in this recipe.

2 pkg. (6 oz.) chicken flavored rice (Rice a Roni) 2 jars (4 oz. each) marinated artichoke hearts 1/2 cup pitted black olives, sliced 6 scallions, chopped 1/2 cup mayonaise 1/2 cup diced pimentos freshly ground pepper Prepare rice according to the package directions. Let cool to room temperature. Drain the liquid from the artichoke hearts into a large bowl, coarsely chop the artichoke hearts and add them to the bowl.
