Salads And Dressings - Rice - Nutty Brown Rice Salad

1 c. brown rice, cooked according to pkg. directions
1 c. mayonnaise
2 tsp. sugar
1/4 tsp. salt
1 c. sliced celery
1 c. pecan pieces
4 scallions, sliced
3 medium oranges, peeled and sectioned (optional)


Cover cooked rice and refrigerate until cold.

Add mayonnaise. Mix well. Chill 1 hour. Stir in remaining ingredients. Chill again before serving. Serves 8.

1 cup wild rice 4 cups canned chicken broth 2 cups frozen peas, thawed 4 stalks celery, thinly sliced on the diagonal 8 green onions, sliced thinly 1/2 cup slivered almonds, toasted or chopped walnuts, toasted 2 cups cooked chicken breasts (optional) 1 cup sweetened dried cranberries Dressing: 4 Tblsp. red wine vinegar 2 Tblsp. soy sauce 2 tsp. sugar 1/2 cup vegetable oil 4 Tblsp. sesame oil In medium saucepan, cover rice with cold water to a depth of 1inch above rice. Heat to boiling. Drain water from rice and add broth.

3/4 cup MJB Quick Brown Rice, cooked according to pkg. directions, and cooled 1 can (11 oz.) mandarin orange segments, drained 1/3 cup chopped celery 2 Tbl. chopped green pepper 1/2 cup mayonnaise 2 Tbl. lemon juice dash powdered ginger 2 to 3 avocados* Combine the cooked and cold rice, orange segments, celery and green pepper. Mix mayonnaise with 1 tbl. lemon juice and ginger. Blend lightly with rice mixture. Cut avocados in halves lengthwise. Remove seeds and peel. Sprikle halves with remaining lemon juice and salt. Heap rice mixture in avocado halves and serve on
