Salads And Dressings - Nana's Cauliflower Salad

1 head cauliflower, broken into bite-size flowerettes
1/2 lb. bacon, cooked and crumbled
2 medium tomatoes, diced
1 bunch green onions, chopped
1 cup diced cheddar cheese
3/4 cup pimento-stuffed sliced olives
1/2 cup mayonnaise


Toss all ingredients together. Makes approximately 10 servings.

Yield: 2 1/2 cups 2/3 cup pitted green olives, coarsely chopped 2/3 cup pitted black olives, coarsely chopped 1/4 cup pimiento, chopped 3 cloves garlic, finely minced 1 anchovy fillet, mashed 1 tablespoon capers 1/3 cup fresh parsley, finely chopped 1 teaspoon dried oregano 1/4 teaspoon freshly ground black pepper 1/4 cup olive oil Combine ingredients and place in a nonreactive container. Cover and refrigerate 12 to 24 hours before serving. Keeps for several weeks under refrigeration.

20 Ounces Cauliflower -- frozen, bag 1/4 cup celery -- chopped 1/4 cup onion -- chopped 6 eggs -- boiled and chopped 1 cup mayonnaise 1/2 cup sour cream 1/2 cup cheddar cheese – shredded 2 teaspoons yellow mustard Bake frozen cauliflower uncovered at 325 for one hour to dry. Let cauliflower cool and roughly chop. Mix all ingredients together, cover and refrigerate. Add salt, pepper, etc to taste.
