Salads And Dressings - Maui Caesar Salad

1/3 cup peanut oil
2 tbl. rice wine vinegar
2 tbl. pineapple juice
2 tbl. egg substitute
2 tbl. ground ginger
1/4 tsp. salt
1 large head romaine lettuce -- torn
1 (3-1/2 oz.) jar macadamia nuts -- chopped and toasted
Hawaiian Bread Croutons
1 cup banana chips -- optional


Combine first 6 ingredients, and mix well with wire whisk. Cover and chill at least 1 hour.

Combine lettuce and nuts in a large bowl; add dressing, tossing gently. Sprinkle with croutons and banana chips, if desired.

Hawaiian Bread Croutons:
1/2 tbl. butter or margarine, softened
2 (3/4" thick) slices Hawaiian Bread
1 tsp. ground ginger, divided


Spread butter on both sides of bread slices, and sprinkle evenly with 1 tsp. ginger. Cut into 3/4" cubes, and place in a 15x10x1" baking pan. Bake at 350 degrees for 15-20 minutes or till browned and crisp, stirring every 5 minutes.
