Salads And Dressings - Cucumber-onion Salad

2 medium cucumbers
2 tsp. salt
1/3 cup cider vinegar
1/3 cup sour cream
3 Tbl. light brown sugar
1/2 tsp. Dijon mustard
1/4 tsp. pepper
1 medium red onion, thinly sliced


Peel the cucumber to create a striped pattern. Cut into then rounds and place in colander. Sprinkle with the salt, toss well and let stand for 15 minutes. Rinse and pat dry.

2 cucumbers 1 purple onion pinch of sugar pinch of cayenne ice cubessplash of raspberry vinegar or other vinegar Peel and split cukes lengthwise. Spoon seeds out. Slice thinly, (they resemble little slices of apples). Slice onion and add sugar, salt and cayenne. Add a few ice cubes. Splash with vinegar and toss. Let the flavors mingle for at least 10 minutes.
