Salads And Dressings - Creamy Ranch Dressing

1/4 cup 1% low-fat cottage cheese
3 tablespoons low-fat buttermilk
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons freshly grated Parmesan cheese
1 small shallot -- sliced
1 clove garlic -- crushed
pinch of pepper
1 teaspoon chopped fresh basil or 1/2 tsp. dried


In blender or food processor put, cottage cheese, buttermilk, lemon juice, Parmesan green onion, garlic, pepper, and 1-1/2 tsp. water. Process until smooth and creamy. Add basil, pulse just to combine.

Cover and refrigerate until ready to use. This dressing will keep up to 1 week.
