Salads And Dressings - Cornbread Salad

2 (8 oz.) boxes Jiffy® cornbread mix
10-12 slices cooked bacon, crisp
2 tomatoes chopped, drain juice
1 medium onion chopped
1 pint jar mayonnaise, no substitute
1 medium to large green pepper chopped


Prepare cornbread according to directions on box, cool. After it has cooled crumble into a large bowl. Add remaining ingredients and stir until it is all moistened; do not overmix. Refrigerate overnight to allow flavors to blend.

1 skillet of cornbread, crumbled (10 inch skillet) 8-10 Slices bacon cooked and Crumbled 1/2 cup Finely chopped celery 1 large Vadalia onion chopped 1-2 Tomatoes chopped fine 1 Green pepper chopped fine 2-4 Hard boiled eggs chopped Mix all ingredients with enough mayonnaise to hold together. Chill at least 2-3 hours or overnight. You can use other things in it as well, like black-eyed peas, parsley in it, spring onions or purple onions instead of vadalia, etc.

1 (8 oz.) box Jiffy cornbread mix7 slices bacon1 bunch green onions, chopped finely1 small tomato, chopped finely3-4 tbsp. mayonnaisesalad greensBake cornbread according to package directions; cool. Crumble into a bowl. Fry bacon, cool and crumble over cornbread. Add the onions, tomato and mayonnaise and toss to combine. Refrigerate overnight and serve chilled over salad greens.
