Salads And Dressings - Cold Couscous Salad
2 1/4 cups chicken broth1 (10 oz.) box couscous (whole wheat or regular)
1/2 cup chopped onions or scallions
1/4 tsp. crushed red pepper
1 cup diced tomatoes
1/3 cup diced fresh basil
1/4 cup
1/4 cup balsamic vinegar
Bring broth to a boil; add couscous and remove from heat. Cover and let this stand 5 minutes. Transfer to large bowl to cool. Add remaining ingredients and chill before serving.
Serves 6 as a side dish
