Salads And Dressings - Chinese Chicken Salad
1 pound chicken, cooked and shredded2 oz. Py-Meifun noodles (Chinese rice sticks)
1 head lettuce, shredded
4 stalks green onion, chopped
1 stalk celery, very thinly sliced
small bunch cilantro, chopped (optional)
3 radishes, thinly sliced (optional)
2 tbsps. almonds, toasted and chopped
2 tbsps. sesame seeds, toasted
1 pkg. frozen peas, drained
Break noodles into small portions and deep fry in hot oil until noodles puff up. Use 2 spoons and turn so entirenoodle cooks. Remove and drain.
Combine ingredients and toss with dressing just before serving.
Dressing:
2 tbsps. sugar
1 tsp. salt
1/2 tsp. fresh ground pepper
1/4 cup salad oil
1 tbsp. Chinese sesame oil
3 tbsps. vinegar
Combine and chill.

4 boned and skinned chicken breast halves -- cooked and chopped 8 ounces waterchestnuts -- drained and sliced 3 green onions and tops -- chopped 1/4 cup sesame seeds -- toasted 1/3 cup sliced almonds -- toasted 1 tablespoon poppy seeds 3 ounces chow mein noodles 1 head iceberg lettuce broked into small pieces 4 tablespoons sugar 4 tablespoons cider vinegar salt and pepper 1/2 cup vegetable oil In a large bowl, mix together chicken, water chestnuts, green onions, sesame seeds and almonds. Pour dressing over chicken mixture and toss gently to mix. Refrigerate until chilled, about 2 hours.
