Salads And Dressings - Chilled Pasta, Roast Garlic And Tomatoes

1 head of garlic
1 tablespoon olive or other oil (approximate)
3/4 pounds pasta, any shape
1/2 cup virgin olive oil, divided
8 medium tomatoes, peeled, seeded and diced
1/4 cup chopped fresh basil
Salt to taste
Freshly ground black pepper to taste
3/4 cup grated Parmesan Cheese
4 sprigs of fresh basil


Preheat oven to 400° F.

In an oven-proof dish or skillet, coat the head of garlic with olive or other oil. Place in lower rack of oven and cook until just tender,about 30 minutes, depending on size; set aside to cool.

Cook the pasta according to package directions. Transfer to a strainer, drain and rinse with tepid water. Transfer to a medium size bowl. Add 1/4 cup of olive oiland toss to coat the pasta. Chill in refrigerator.
